I know, you might think I’m a little off with my popsicle recipe. BUT the weather has truly been amazing these past few days and I had to make something summery to celebrate (I think I might be in denial mode too). It looks like September brought the heat back to Canada (yay!).
So I thought that perhaps if I kept on making cold soups, fresh salads and popsicles, maybe, just maybe summer would decide to hang on a little longer? At least it’s worth trying.
I bought a gigantic basket of some of the juiciest, sweetest and most gorgeous peaches at the Farmers’ market last weekend. I’ve literally been eating them all week in all ways possible : fresh (perfect snack), in smoothies, in salads, on yogurt, on toasts, I even grilled them on the BBQ (I might share this one with you next week! Sooo delicious!). I just can’t get enough of them.
So. I made these creamy peach popsicles!
The peaches are pureed with some cardamom (killer combo!) and then paired with a creamy coconut milk and coconut yogurt mixture that’s been sweetened with a touch of honey. The result is a fresh, creamy, delightful snack or what I like to call my ode to summer.
Of course, this is a much healthier version of the popsicles we’ve been used to. They are by no means similar to the overly sweet, full of artificial flavour and colouring pops we’ve grown up with. They’re more of a healthy, refreshing snack that you want to enjoy in the sun on a hot day. You could even eat them for breakfast if you’d like!
I feel lucky I get to live in Toronto, because it turns out Ontario grows some of the most delicious peaches. The province leads the country with about 82% of the peaches and nectarines production in Canada.
Peaches are packed with flavor, sweetness, juiciness and a whole lot of nutrients. The list of their vitamin and mineral content is quite impressive.
Peaches are a very good source of vitamin C, which fights infections and acts as an antioxidant. They are also rich in vitamin A in the form of beta-carotene, which protects against cancer and diabetes, supports a good eyesight, and helps maintain the elasticity of the skin. The darker the flesh, the higher its beta-carotene content. Beta-carotene is a fat-soluble compound, which means that it’s best absorbed in the body when consumed with some dietary fat. Pairing the peach with a healthy source of fat like coconut milk or coconut yogurt ensures that the body gets the most of that wonderful beta-carotene.
Peaches are an all around incredibly nutritious fruit and you should definitely enjoy them while they’re still in season!
Notes on the recipe: I used both coconut yogurt and coconut milk for their combination of texture, but if you only have one of them on hand, I’m pretty sure it would work very well too. Simply double the quantity. I used full-fat coconut milk but you can use low-fat if you wish. As for the coconut yogurt, I used this brand.
Creamy Peach, Cardamom & Coconut Popsicles
- 1 cup unsweetened coconut yogurt
- 1 cup coconut milk about 2/3 of a can
- 2 tbsp unpasteurized honey
- 2 tsp vanilla extract
- 2 ripe peaches pitted
- 1 tsp ground cardamom
- Shredded coconut optional
Make the coconut filling:
Place coconut yogurt, coconut milk, honey and vanilla in your blender and blend until smooth. Pour in a separate container and set aside.
Make the peach filling:
Rinse your blender. Place the peaches and cardamom in the blender and pulse until pureed.
Pour the peach puree into the popsicle molds (about 2 tbsp per mold, or filled to about 1/3). Fill up the rest of the mold with the coconut mixture. Insert a popsicle stick into each mold and stir gently. Sprinkle the top part with some coconut shreds. Freeze for at least 3-4 hours.
When ready to eat the popsicle, rinse the molds under warm water for a few seconds, this will allow you to get them out easily. Once out, you can dip the popsicle into some more coconut shreds if desired. Enjoy!
You can be the ripest, juiciest peach in the world, and there’s still going to be somebody who hates peaches.
